Sambal Ikan Rica-Rica Cheftania

Ingredients:-
1 kg mackerel (i used selar besar)
(rub with a little salt and tumeric powder, fry half cook)
12 nos. cherry tomatoes
20 nos. thai basil
2 nos. bruised lemongrass
2 nos. onion shredded
5 nos. kalamansi extract juice (limau kasturi)
5 tbsp. oil for frying
salt and sugar to taste
Grounded Ingredients:-
15 nos. red chillies
4 nos. garlic
1 tbsp. belacan
1 slice galangal (lengkuas)
(*grind all above into paste - add about 1/2 cup water to grind)

- Heat up oil and add in the grounded paste and bruised lemongrass, stir fry until fragrant.
- Add in the onions, tomatoes, juice, salt, sugar and half of the basil leaves and stir.
- Lastly add in the fish and balance of basil.
- Mix well and ready to be served.
